Blueberries and all the berries, in general, are considered as one of the most nutrient fruits for human health, while they gain one of the top places in the list with the superfoods. They are high in nutrient ingredients, whilst they are poor in calories, carbs, and fat. They are sweet, tasty, and wildly popular.

Specifically blueberries are rich in vitamin C and anthocyanins, the famous natural stains with exceptional antioxidant properties, and according to epidemiological studies they protect from cardiovascular diseases and some types of cancer. Further blueberries are high in iron, calcium, magnesium, phosphorus, potassium, and selenium.

Moreover blueberries have beneficial properties in eyesight, in the prevention and fighting urinary infections, in the prevention of allergies, in dealing with LDL cholesterol and arteriosclerosis, as in the regulation of hypertension.

 

For these amazing and easy to make muffins, ideal for breakfast, snack, for coffee and tea, even for the children’s school snack, you will need:

  • 1 1/2 teacup wholemeal flour or oat flour
  • 3/4 teacup almond milk
  • 1 ripe banana
  • 1/2 teacup raw sugar or coconut sugar
  • 2 tsp baking powder
  • a pinch of salt
  • 1/2  teacup blueberries

 

Instructions:

It is so easy to make them!!

Mix all the ingredients into a mixer except the blueberries, till they become a smooth mixture. Then add the blueberries and mix them gently with a spoon, careful not to smash them!

Fill the muffins silicon cups with the mixture and bake them in a preheated oven at 180 degrees for approximately 20 minutes.
