For about 10 years I used to drink pre-packed almond milk! One day i checked the label on the package and it was a real sock for me when i read that the percentage of almonds which is only 2-3 %!!!
Ingredients of a common pre-packed almond milk:
Water, Sugar, Almond (2%), Calcium (Tri-calcium phosphate), Sea salt, Stabilisers (Locust bean gum, Gellan gum), Emulsifier (Sunflower lecithin)
From that moment on i decided to make it by myself. The process is quick and simple, the milk smells and tastes only almonds and at the same time you avoid all the useless food preservatives of the pre-packed one.
- Soak one cup of almonds at least 8 hours
- Blend almonds with three cups of water
- Sweeten to taste with agave syrup, maple syrup or dates
- Strain the milk to remove the almond meal
Keep it in a glass bottle in the refrigerator for 2-3 days
