Vegan Cacao Energy Balls2 min read

If you make your own plant based milk from your favourite nut, it’s time to hear what you can make with the shredded almonds, hazelnuts, cashews or walnuts that are left over. We have already mentioned in a previous post “How to make your own almond milk” that you should keep the shredded nuts in the fridge after you have reduced their existed moisture by heating them into the oven for 45 minutes at 100 degrees.

When you have enough quantity to fill a tea cup, you are ready to start (that’s enough mixture for 15-20 balls, depending on their size). You can use/mix more than one kind of nuts.

In case you do not make your own plant based milk and still want to try the cocoa vegan energy balls, then you have to soak overnight one or more kinds of nuts and then in the morning, you rinse and drain them well. After that you shred them with a blender.

You will need:

  • 1 tea cup with shredded nuts: almonds, hazelnuts, cashews or walnuts
  • 3 tbsp cacao powder
  • medjool dates, (soaked for half an hour in order to be soft) after you have removed their pit and their outer peeling
  • 2 tbsp cacao nibs

 

Instructions:

Put all the ingredients into a bowl and start to mix them with your hands until they are well combined into a medium soft mixture. If you want you can add 1-2 tbsp from your favourite liqueur or grated orange peel and mix again. Form the mixture into balls and roll them in your favourite toppings: grated coconut, grated chocolate, turmeric, matcha ninja, or for the brave ones grated red pepper. If you want you can dip them into melted chocolate too. Let your imagination and creativity run wild and surprise yourself and your friends with your own customised energy balls.

 

They are ready! You can keep them in the fridge for almost two weeks! I guarantee you will run out of them as soon as you taste them as they are delicious. They are a healthy snack full of energy and beneficiary nutritious ingredients suitable before or after the workout, or to accompany a cup of coffee or tea, and it is also a nice idea for a small gift for early afternoon or morning informal friends gatherings.
